I have to tell you one secret … I have never eaten a blueberry pie. Not even one in 30 years. ( yes I know ).That is such a pity a pity for me because this pie is a sin ..
Maybe the reason why I never bothered to have a look at any is because I could never have access to fresh hand-picked berries like in Norway. But just like Norway, the Vosges region in France has plenty of wild blueberries in the woods and I have chosen to get inspired from this recipe to prepare this FANTASTIC recipe.
My advise no 1, use the smallest variety of blueberries ( that is blue inside, not white) – they are tastier …

Now ..let´s get started !
Ingredients ( for 6 people )
- 250 grams of flour
- 125 grams of butter
- 125 grams of sugar
- 1 egg yolk
1- mix the flour, butter ( it has to be taken out of the fridge 1 hour before), a spoon of sugar, the egg yolk, two pinches of salt and two spoon of water.
2- Knead the dough during 3 minutes and let it rest for 30 minutes.
3- Roll the dough to a thickness of 4 to 5 millimetres and set to the pie mould
4- Prick the bottom of the pie with a fork .
5 – Spread the vanilla custard on the bottom of the pie and the blueberry on top.
6- Set the oven to 180 degrees celsius and cook the pie for 25 to 30 minutes
7- When the pie is ready, sprinkle with sugar ( I actually used less than in the recipe… but, up to you ! )
custard – (vanilla cream)
- 250 grams of milk
- 60 grams of sugar
- 30 grams of maisenna (cornstarch)
- 2 egg yolks
- 1 vanilla pod (or vanilla sugar)
1-Whip the egg yolks and sugar in a bowl, add the cornstarch.
2- Cook up the milk and the vanilla pod and pour it over the egg mix. Mix well.
3- Have it in a saucepan and cook up for a minute.
