cod and strawberry salad

An empty fridge is often  blessing for me; it makes me find creative way to cook.

after a trip in Oslo I bought an olive oil flavoured with mandarin and had fun preparing a fruity salad.

I have just fried the fish in the pan with a bit of margarine for about 10 minutes. A few leaves of ruccola and a handful of strawberries and a dressing made of Oliviers & Co mandarin oil and pomegranate vinegar.
