When autumn knocks on the door, it is time to open up to the good old fashioned “compote “. Traditionally a compote is made with apples but can be flavored with vanilla, cinnamon or mixed with another fruit like pears, mango, plums, berries etc.. The only limit is your imagination!
In this recipe I used more apples than pears. I usually never use more pears that apples to keep a mushy texture. In my experience pears tend to make the compote more liquid.
- 5 apples
- 3 pears
- 2 spoons of vanilla extract ( or powder or vanilla pod)
- 20 cl water
In order to make this compote I used a casserole with teflon for practical reasons. The fruit won´t attach. 🙂
Once you have peeled, cored the fruits and dices them, cook them very slowly. ( the compote should not boil)
The goal is to obtain a mushy texture and not see any fruit pieces. You have to adjust the amount of water. Always be careful with the amount of water and if the appearance seems to liquid, you need to boil away the water. I add the vanilla in the end. No sugar is needed. It is healthy and simple to make.
You can never go wrong with this recipe, it is easy, economic and seasonal 🙂
