Celebrating Saint Nicolas with Mannele cookies

 

In the beginning of December all bakers in East of France prepare brioche ( sweet bread) men called Mannelé or Mannala.

We trace the origin  of the manneles back to  the 15 century in Alsace where they are prepared to celebrate the Saint Nicholas and are  given to the good children.

Traditionally Manneles had different shapes like horses, rabbits, chicken etc .. but their shapes eventually was set up to little men or Saint Nicholas himself.
