French pancakes


  • 125 grams of flour ( I use often spelt flour)
  • 25 grams butter
  • 1 egg
  • 15 cl of milk ( can be cow milk or oat milk)
  • 15 cl of water
  • 1 spoon of rum
  • 1 spoon of vanilla essence
  • brown sugar ( or coconut blossom sugar)


Warm up the milk with the butter bring to a simmer, cool off the casserole, add the rum and the vanilla essence. In a bowl, mix the flour and the sugar , then the egg and the melted butter.

Mix until you obtain a smooth texture.  Let the pancake dough rest for an hour.
