orange marmalade ( sugar free)

ingredients :

  • 4 organic oranges
  • 1 tea spoon vanilla extract
  • 1 tea spoon agar-agar

Squeeze the oranges´juice , add the zest and cook up  ( until boiling point)in a saucepan, add the vanilla and the agar-agar. Stir well as you do not want any clump in the jam later.

Pour into a glass jar and place  it into the fridge. Let it overnight so that the agar- agar does its work.

This recipe is perfect if like me cannot have so much sugar. The texture is different than a regular jam but it makes a perfect tasty fruit spread!

Note :

Be careful not to keep the jam too long ! As there is no conservative, I would recommend to keep it a week maximum. ( that is why I do not make big batches)

Agar Agar is an algae which can be used instead of regular gelatin. It is a very good ingredient to consider if you are vegan or simply do not want to use animal based gelatin. Agar Agar can be used to reduce considerably the amount of sugar in a jam. In my case I replaced all the sugar by making sure I used good quality product full of flavor.

as a rule use 2 grams of agar-agar  for  every half liter. 😉
