Paleo tomato pie

ingredients :

  • 1 1/2 cup of cassava flour
  • 1 cup of arrow root flour
  • 1/2 cup of coconut flour
  • salt, onion and garlic powder ( 2 tea spoon of each)
  • 2 tea spoon of gelatin and 1/4 glass of hot water
  • 1 cup of water
  • 1 cup of water
  • 1/2 cup of avocado oil / canola oil / coconut oil

Instructions

Mix all the dry ingredients

Add the 2 teas spoons of gelatin in your small glass og hot water. Mix until dissolved.  I am very careful with mixing the water with the dry ingredient so I do it carefully. Add the cup of water slowly until the dough in´t sticking.

Keep it cool in the fridge for 15 minutes before kneading it into your form.

I make some forks marks on the bottom.

Make a mix of cream and dijon mustard and lay it on the bottom.

Slice the tomatoes and fry them with a bit of honey until most of the water is evaporated.

Lay the slices on to the dough.

Place in the oven for 20 minutes at 180 degrees celsuis.
